docs: macOS keeps categories but never shows them
Both lines came home, reversed but intact;
Contacts never shows them, and that's the fact.

+## Categories survive a round trip but are never shown
+
+`rake probe:categories` serves two `CATEGORIES` lines (RFC 2426 section
+3.6.1), one of them a comma list. Contacts shows neither anywhere on the
+card, and keeps both anyway. The card it writes back after an unrelated
+edit carries both, values byte-identical and the list unsplit, in reverse
+order:
+
+```
+Sent: CATEGORIES:family,school run
+ CATEGORIES:neighbours
+Came back: CATEGORIES:neighbours
+ CATEGORIES:family,school run
+```
+
+A tag can therefore ride in the stored card through a macOS edit, but
+someone using Contacts can neither see nor change it; only this server's
+own UI can. Verified 2026-09-10, macOS 26.5.1 (AddressBookCore/2732.600.11).
